Under Gordon Bruce, modern-fangled technology continues to take a backseat at Knockdhu Distillery, established in 1894. Instead, the manager of the distillery known for anCnoc Highland Single Malt Scotch Whisky strives to keep traditional whisky-making skills alive and kicking.

What is it that you do and how do you do it? We make whisky. I manage a very small, very traditional distillery in North East Scotland. The emphasis is very much on having people take care of production rather than rely on technology and computers and modern-fangled things like that. The 21st century is overrated, grossly overrated.

The distillery operates 24/7, with basically zero automation. We can only do that because of the guys we have here – it’s a team of five now. The guys will spend the whole shift on their feet, they’re continually moving. It’s very much a hands-on process.
